Cascade House

Our medium-roast cornerstone: sweet enough for a careful pour-over, sturdy enough for the morning rush.

Comforting, not predictable.

Cascade House brings together small lots from family farms in Huila. Careful washing gives the cup a clean red-apple lift, while our measured medium roast develops caramel sweetness and a toasted-almond finish.

Brew guide

Start with a 1:16 ratio

For drip or pour-over, use 22 grams of coffee to 350 grams of water near 200°F. Bloom with 50 grams for 35 seconds, then add the remaining water in steady pulses. Aim for roughly three minutes and adjust the grind if the brew runs fast or slow.

For espresso, begin around 18 grams in and 36 grams out in 28–32 seconds. The caramel character handles milk well, while the red-apple note keeps a straight shot lively.

Why this coffee works

Cascade House is a reliable daily cup rather than an unchanging commodity blend. Farms may rotate with harvests, but the flavor target stays anchored in caramel sweetness, gentle fruit and a rounded finish.

Small adjustments, clearer flavor

If it tastes sharp

Grind a little finer or extend contact time. Change only one variable per brew so you can tell which adjustment brought back sweetness.

If it tastes dry

Grind slightly coarser or shorten the brew. Water that is far above 200°F can also emphasize the roast finish.

Keep it fresh

Press air from the valve bag and reseal it after each use. Store at room temperature away from sunlight, moisture and strongly scented foods.
