Brew guide
Espresso: Start with 18g in, 36g out in 28–32 seconds at 200°F. The shorter ratio keeps the molasses body while avoiding a smoky finish.
Cold brew: Steep 85g coarse coffee in 1 liter of cold water for 14 hours, then filter. Serve over ice and dilute to taste.
