Before you brew
We roast Tuesday through Friday and match orders to the next appropriate batch. Most bags leave our roastery within two business days, with the roast date printed clearly on the seal.

A Seattle roast profile
Ember began with a straightforward idea: coffee can be expressive without becoming fussy. We buy coffees with enough structure to taste clear as black coffee and enough developed sweetness to sit comfortably beside milk. Then we roast in small, repeatable batches and taste each production roast before it reaches the shop.
Our range moves from the berry-and-citrus lift of Sunrise Bloom to the deep chocolate body of Night Ferry. Cascade House holds the center as an easy daily brewer, while Rainier Reserve rewards a slower weekend pour. The four coffees are distinct on purpose; choosing should feel like matching a cup to your morning, not decoding jargon.
Tasting notes are useful direction, not added flavors. Blueberry, caramel, orange peel and molasses describe what our team finds naturally in the brewed coffee. Every bag contains only roasted coffee beans.

We combine orders by coffee and roast profile, then assign them to the next suitable Tuesday–Friday batch. That keeps production efficient without leaving finished bags waiting on a shelf.
Fresh coffee releases carbon dioxide quickly after roasting. A short controlled rest helps the cup brew more evenly, so we do not rush hot beans straight into a shipping box.
Each order is checked against the requested coffee, size and grind. We seal it in a one-way-valve bag, print the roast date, and send tracking or pickup instructions when it is ready.
Responsible sourcing
We identify country, producing region, processing method and known varieties on every product. When a coffee is assembled from several small farms, we say so rather than presenting a fictional single-farm story. Lots change with harvests, and product details change with them.
Our buying decisions weigh cup quality, repeatability and the information available through importing partners. This site does not publish unverifiable impact numbers or sweeping sustainability promises. We would rather give you accurate lot details and improve the record as documentation arrives.
Coffee is agricultural, so a familiar name can evolve through the year. Cascade House may rotate among compatible Huila lots while remaining anchored to caramel, red apple and almond. If a change is large enough to alter that promise, it becomes a new product.

Delivery and pickup
Shipping cost and applicable sales tax are calculated from the address at checkout. Once the carrier scans the parcel, we email tracking to the address used for the order.
Transit time begins after roasting and packing, not when the order is first submitted. Weather, holidays and remote destinations can affect the carrier’s estimate.
Choose roastery pickup during checkout to remove the shipping charge. We email collection instructions and the pickup window when the order is fully packed.
Please wait for the ready message before traveling; the address alone does not mean a custom-ground order has cleared production.
If a parcel arrives damaged or the contents do not match the confirmation, photograph the package and label before opening everything. Those details help us resolve the fulfillment issue quickly.
Coffee roasted or ground to preference is not returnable simply because the flavor is not a match, but we are glad to help dial in the brew.
Practical brew notes
Use about 60 grams of coffee per liter of water and shake the basket gently before brewing. A flat bed helps water move through the grounds evenly rather than finding one fast channel.
If the cup is sour and thin, grind finer. If it is bitter and drying, grind coarser before changing dose.
Start with a bloom using roughly three times the coffee’s weight in water, then wait 30–40 seconds. Continue in calm pulses that keep the bed wet without filling the brewer to its rim.
Consistency matters more than an elaborate pattern. Record coffee, water, grind and time when a cup works.
Use a medium-coarse grind and steep for four minutes before breaking the crust. Press slowly, pour the full batch promptly and avoid leaving brewed coffee on the grounds.
A silty cup usually needs a coarser, more even grind rather than more force on the plunger.
Begin near a one-to-two brew ratio: 18 grams in and 36 grams out around 30 seconds. Taste first, then adjust grind to change flow while holding the dose steady.
Use coffee within a comfortable fresh window and purge retained grounds after a large grinder adjustment.

More useful answers
A 12oz bag yields roughly seventeen 10-ounce brewed cups at a common ratio, while 2lb yields about forty-five. Your actual result depends on dose and strength, so track how quickly the first bag disappears before changing cadence.
Whole bean preserves aroma longest if you have a burr grinder. If you do not, choose the named grind closest to your brewer; a consistent roastery grind is usually better than an uneven blade grinder at home.
Keep the valve bag sealed at room temperature in a dark, dry cupboard. Avoid the refrigerator, where moisture and food aromas can affect an opened bag; freeze only well-sealed portions you will not repeatedly thaw.
Check the confirmation immediately and request a correction before the bag enters production. Once coffee has been ground it cannot be made whole again, but we can suggest adjustments if the package is already on its way.
